Chickpea Cutlets

1 cup cooked chickpeas
2 tbs olive oil
1/2 cup vital wheat gluten
1/2 cup plain bread crumbs
1/4 cup vegetable broth or water
2 tbs soy sauce
2 cloves garlic, grated
1/2 tsp lemon zest
1/2 tsp dried thyme
1/2 tsp Hungarian paprika
1/4 tsp dried rubbed sage
olive oil for frying

1. Mash chickpeas with oil until smooth. Add remaining ingredients and knead for 3 minutes, until strings of gluten have formed.

2. Divide cutlets into four equal pieces. Knead each piece in hand and then flatten and stretch each one into a 6×4 inch cutlet.

3. Fry in oil.
