Simple Seitan

1 cup vital wheat gluten flour
3 tbs nutritional yeast
1/2 cup cold vegetable broth
1/4 cup soy sauce
1 tbs olive oil
2 cloves garlic, grated

Broth:
8 cups cold water, plus 3 vegetable broth cubes OR 4 cups broth and 4 cups water
1/4 cup soy sauce

1. Mix flour and yeast.

2. In different bowl, mix broth, soy sauce, olive oil, and garlic.

3. Pour wet into dry and mix until clumping. Knead for about 3 minutes until dough is elastic. Cut into 3 pieces.

4. Fill pot with water, broth, and soy sauce. Add gluten pieces.

5. Cover and bring to boil, watching for the boil. As soon as it boils, lower heat to low simmer.

6. Let steam escape and simmer for an hour, turning occasionally.

7. Turn off heat and take off lid. Let sit for 15 minutes.

8. Remove from broth and let cool.
